Jeyanthi showed us some quick home foods that could be done as a one pot rice cooker/pressure cooker meal. Very interesting and she did a great job for her first time ever!<br />

Just make it yourself! I know, I know, it sounds time consuming and risky.<br /><b>Who has the time to do that? How do you know the recipe you follow is even going to work out for your family?</b><br /><br />I'm sick of the taco seasonings that just taste like salt and chilli. Mission brand was the nicest but still too much salt, so I made my own. Here's an "inspired" version, not traditional to any type of food but an easy base for family dinners.<br />
<br />
So I used it as inspiration and made up one myself. Here it is, the <b><span style="color: orange; font-family: Georgia, Times New Roman, serif; font-size: large;">Mexican/Moroccan/Indian Versatile Spice Mix:</span></b>(inspired, not traditional!)<br /><br /><b><span style="color: red;">Step 1:</span></b> <b>Dehydrate</b><br />6 large capsicums (Red, green or yellow doesn't matter, I like red and yellow)<br />
9 medium tomatoes<br />
<br />When they're ready they'll look super dry but will be a bit bendy. Leave them to the side for a few minutes and they'll crisp up. They are OK for safe storage when they snap like a cracker. Soft will spoil.<br /><br /><b><span style="color: red;">Step 2:</span></b> <b>Coffee grinder/food processor</b><br />Grind the dehydrated veg to a fine powder<br />

<b><span style="color: red;">Step 3:</span> Shop and mix</b><br />
From the store, get: Powdered garlic, oregano, sea salt, dried minced onion and white pepper. Mix to the following amounts:<br /><span style="font-family: Arial, Helvetica, sans-serif;"><br />1 cup capsicum powder</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 cup tomato powder</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">25g garlic powder</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">25g cumin</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">3T oregano</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 1/2 T sea salt</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1 tsp white pepper</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">25g of dried minced onion.</span><br />
Store in airtight container<br />
<br />
<b><span style="color: red;">Step 4: </span>Cook with it!</b><br />Use 2-3 tablespoons of this spice mix with 500g of either meat/cooked beans then add some extras:<br />
<br />
For Moroccan add cinnamon, nutmeg and cayenne to taste.<br />
For Mexican add fresh coriander stalks finely chopped, bit of parsley and cayenne to taste.<br />
For a quick Indian dish add 2 tsp of your fav curry powder (I get mine from the local Indian grocer) with extra coriander and fresh curry leaves if you have them.<br />

<br />Above is my Moroccan version of the spice (with added veg stock cube) mixed with mince and cooked pasta stars then stuffed into capsicums to roast. Hubby loved it though I would have preferred beans and quinoa I think. :)<br /><br />The dried veg base makes ALL the difference to taste without using salt, yeast extract and all the other junk in store bought spice mixes.<br />

It's been way too long since I last had anything to blog about "dirt to dinner" wise. I've been extremely busy with <a href="https://www.facebook.com/SuziNorwexProductsAustralia" target="_blank">Norwex</a> which has been great. The Sydney team is growing, the Central Coast team is new and doing really well. Now it's just my own area of Sydney that I need to work on!<br />

Hubby's been off work for 6 months now with a back injury. He's on the mend but in the meantime I've done my best to kick up business and make it work for me. It's been surprisingly easy (though a lot of work) as people seem really really ready for a change from the extreeeemely expensive, high maintenance, relatively short lived and time consuming Enjo. I'm happy to say that ex-Enjo consultants and customers are now topping up with Norwex and LOVING it!<br />

Anyway! Mon-Wed is DS2 time. I finally felt my old self a little after making pickled onions and experiencing organic raw milk for the first time. It's illegal to sell for consumption, so it's not sold for consumption... if you know what I mean.<br />

The wooden walkway to the door above was finally upturned about a week after this pick. We found 37, yes, THIRTY SEVEN RED BACK SPIDERS - Argh!!! Squish, squish, squish!<br />Below is the gnome's cave. Isn't DS2 so cute :) Even at 4 he still has those soft curves.<br />

I must have had the stuff towards the end. Now how to find out a way of separating the milk and cream while it's fresh.<br />

This simple and delish. Similar to the fudge pops that I make (down the page) for the kids. This smoothie/shake is perfect for when you really want something chocolatey without being naughty! It's rich, thick, smooth and dark. . <br />

Water and soft flesh scooped from a drinking coconut<br />
1 tablespoon of raw cocoa/cacao (more antioxidants than green tea!) <br />
1 heaped tablespoon of smooth raw/local peanut butter ( I use Dick Smith as it's delish and 100% Aussie)<br />
1 level tablespoon of raw honey (or agave/pinch of stevia)<br />
3 cups Almond cream<br />
<br />
Stick the scooped out coconut flesh and a small amount of coconut water in the blender and wizz up until smooth. Then add the rest of the water and other ingredients and blend until smooth and incorporated.<br />

Make ahead of time.<br />
2 cups of raw almonds soaked for a few hours pref 5hrs/overnight. Rinse a couple of times and then Pop in the blender with 3 cups of filtered water. Blend on high/ice crusher setting until the almond mealy bits are fine.<br />
Strain and twist through muslin and use. <br />
<br />
Retain almond meal for use in cakes/cookies/muffins etc. You could even get some more almond milk out of the remaining meal when blended up again with 2 cups of water.<br />

I've been nagged to put this recipe up (and the following not so super food cookie) so here it is.<br />
My kids devour these little beauties, I thoroughly enjoy them too. No photos = too tasty to last that long!<br />

doesn't contribute to heart disease like other fats can when they are

Crack open the top of the drinking coconut. Pour the water into a tall jug, scoop out the soft flesh and add to the jug also.<br />
Add the banana, cocoa, dates/honey to the jug and puree with a stick blender. (Or whatever blender you have).<br />
Add the peanut butter to taste at the end. Blend until smooth.<br />

Pour into ice pop moulds and place in freezer over night. <br />

<li>I want to buy land and grow vegie trees, start a permaculture school and weave my own jumpers.. possibly dye them with nettles (but it has to be done well and in a funky style inline with Espirit) </li>
<li>I don't use fluoride toothpaste and believe that comfrey and arnica works to prevent and dispel bruises (just because I experimented with it on my own family and my Dr gave me some!).</li>
<li>I like my kids to play in the trees and dirt rather than on plastic play equipment <br /><div style="text-align: center;">

They use a fact.. here Sally's used tests from the 1940s to back one of her claims and then has a 'feeling' at the end of another or a "nah nah nah nah naaaah, yeah, your putting toxins in because you just are." me tell you about two studies which were not published. The first was
described by Paul Stitt who wrote about an experiment conducted by a
cereal company in which four sets of rats were given special diets. One
group received plain whole wheat, water and synthetic vitamins and
minerals. A second group received puffed wheat,
water and the same nutrient solution. A third set was given only water. A
fourth set was given nothing but water and chemical nutrients. The rats
that received the whole wheat lived over a year on this diet. The rats
that got nothing but water and vitamins lived about two months. The
animals on water alone lived about a month. But the company's own
laboratory study showed that the rats given the vitamins, water and all
the puffed wheat they wanted died within two weeks---they died before
the rats that got no food at all. It wasn't a matter of the rats dying
of malnutrition. Autopsy revealed dysfunction of the pancreas, liver and
kidneys and degeneration of the nerves of the spine, all signs of
insulin shock.</span></div>

like these suggested that there was something actually very toxic in
the puffed wheat itself!</u> Proteins are very similar to certain toxins in
molecular structure, and the pressure of the puffing process <u>may</u> produce
chemical changes, which turn a nutritious grain into a <u>poisonous

Here's why Sally's rat trial point fell apart for me:</div>

talked about these studies not being published as if it was being kept a secret
from the masses. Stuff like this is published all the time, proving
links with cancer etc - people just don't care, or there isn't the right budget to put into marketing the results to make people notice enough to make a difference.<br />There are so many
health journals out there plus the kind like the Academy of Nutrition
and dietetics etc who would have happily have published findings
like that.<br /> </li>
<li>Since they were "done as a joke" is one HUGE bell
clanging "Don't take me seriously" and clearly means that guidelines may
not have been followed. The strict observation that goes into rat
studies (and it's done for pretty much everything - even Stevia) is so
much so, that when followed, some journal somewhere will publish it.
Publishing means it's METHOD was credible. As I said before, there are a
tonne of Natural/Alternative medicine journals that would have loved to
publish findings as these, so not being published is another clanger
that it must be taken with a large dose of salt.<br /> </li>
<li>The biggest clanger of all was the fact that Sally surmised from these unpublished "joke" studies that rats had died from a toxic substance within the puffed grain = "<u>insulin shock"</u>. This condition is otherwise known as hypoglycemia. That's right folks! High insulin levels - raised due to the only food their eating to be <u>high GI</u>. NOTHING TOXIC in the <a href="http://www.youtube.com/watch?v=eU06_vSphEM" target="_blank">manufacturing</a> or protein structure, just high pressure and steam. That's it!</li>

alot of respect for Sally as her theories about food were music to my 'sourdough healthy home food' sympathetic ears, but I was so blown away by the mindlessness of her rat study conclusions, that I've stopped soaking my grains while I think on
it all a bit. It is really disappointing because now I'm wondering
what other supposedly healthy habits I've been doing that are merely misguided opinion and not fact.. </div>

Well I couldn't help <b>Suzi-fy it!</b> This version is NUT-FREE for school lunches. You could also make a maple pecan version (omitting the golden syrup/honey and seeds).<br />

1 cup quick oats<br />
1 plain flour<br />
2/3 dessicated coconut<br />
1/2 cup <a href="http://en.wikipedia.org/wiki/Rapadura">rapadura</a> (or you can use brown)<br />
1/2 cup sunflower seeds (for the batch above I put sunflower and pepitas with chia, linseed and sesame seeds to add extra nutritional value)<br />

1/2 cup pumpkin seeds/pepitas<br />
1/2 cup finely chopped dates<br />
1/2 cup butter<br />
3 T golden syrup/honey<br />
1 T water<br />
1/2 tsp bicarb<br />
<br />
Melt butter, golden syrup and water in microwave or stove top. Then add in the bicarb and stir.<br />
Add all dry ingredients and press down firmly into a greased lamington try.<br />
Bake at 160C for approx 20mins until slightly golden ontop and set.<br />

Store in airtight container - freezes well.<br />

After signing as many petitions, emailing politicians on every topic, I've decided to put all the causes of the world on hold. My seven page hack at a major TV channel and the Advertising Standards Bureau will be submitted with the 60 supporters. Their comments and my inclusion of a government study showing massive HOLES in or lack of policy, codes and restrictions of advertising - will have to wait for me to catch my breath!<br />

Trying to be counted in the fight against goodness, against nudity in advertising (even though it's targeted at adults, kids are still THERE in the shops seeing it!), trying to save Marriage in it's original and special form, trying to stop post-birth abortion... any kind of abortion - finding out there's an abortion clinic near where I live!!!! Helping hammer the stores selling porn t-shirts.... too many very worthy causes to fight for.<br />

Sometimes I think the only reason we get sick (I'm just a bit sick.. it's a <a href="http://www.youtube.com/watch?v=VbmbMSrsZVQ">"man cold"</a>) is just so we slow down and have time to think, reflect and calm down.. a bit.<br />

So, aside from my fight against what seems the impossible, my irks against misleading the public and researching my fingers raw to find a more affordable, ethical/eco means to household living..... I'm having fun taking my friends to the <span style="font-size: large;">DOSA HOUSE</span>. Thanks to Jeyanthi and <span class="nickname">Hugh Fearnley-Whittingstall, <span style="color: red;">I've remembered where some of my delightful happiness lies. First it was my father in law, the next week it was Amanda my amazing and calm sister in law, then one of my favourite down to earth 'say it how it is' friends Kay and this week it was my close friend who works her butt off for her family and doesn't faint with exhaustion every week (like I would) Maryanne. Who opens a shop with only a few things on the menu?! Well for a one chef place she's busy! South Indians and Sri-Lankans go there when they miss home and want Auntie Jeyanthi's cooking, just like home. Which is alot! I even convinced her into maybe doing a group of us some Thalis.. maybe even with a massive table sized Dosa!! :o) <br />

With it's plastic cups of tap water, maps blue tacked to the wall and flurescent elephant picture, it's a traditional no frill affair.<br />

The three things that keep me going: <span style="font-size: large;">1.</span> Jeyanthi's beautiful smile, personality and caring nature <span style="font-size: large;">2.</span> the sheer lack of pretense and <span style="font-size: large;">3</span>. the food! So good, you don't care if the order's wrong. It's ALL good!<br />

Fresh "Sourdough" bread has a big section in every (local to me) supermarket bakery area. So why is it that when I eat the organic sliced loaf, it FEELS <b>completely different</b> to eat than the in store baked stuff??<br />

Taking a quick peak at the ingredients <i>(OK! OK! So it's my favourite past time to read labels, ingredients, who grew, packed and produced the product. Sorry if you're nodding off to sleep, I'll get to the point.) </i>and found a whole bunch of additives, preservatives and<b> yeast</b> in the bread. Most of which did have some sort of sourdough ingredient - I'm guessing to introduce the taste to the faux sourdough - but some had NONE! Using vinegar or lactic acid for the sour effect.<br />

*Yes, the bread has a sourdough element in it (most of the time)<br />
*Yes, it's freshly baked<br />
<b>BUT:</b><br />
*It wouldn't have the same Low GI rating as a true sourdough and..<br />
*It would negatively impact those on diets requiring this low GI fermented product.<br />
*It contains yeast which is a fast acting raising agent - fast production = more money but not the fermentation<br />
*It has the sourdough starter for a flavour addition (not the point!)<br />

Can I just EXPLAIN!? The whole point to having a sourdough bread is that it's a HEALTHfood. Not a fad food.<br />

Any bread you see with a multitude of added vitamins and minerals is from a super duper refined and quickly processed flour - having to add a little back for all the goodness it lost in the fast money making process.<br />

Well, for the Rocky Road anyway!<br />

So here are the recipes:<br />

<span style="font-size: large;"><b>Suzi Style Rocky Road</b></span> <b>- you know me, can't do anything without stuffing something healthy in there! All measurements are "-ish" add more or less, whatever you like.</b><br />
<br />
2 x 375g packets of Nestle cooking <b>chocolate Melts</b> (I did one batch white and one batch milk)<br />
1 cup <b>whole dried cranberries</b> (I got mine from Thomas Dux as they looked nice and plump) <br />
1 cup <b>desiccated coconut</b><br />
1 cup <b>whole raw cashews</b><br />
1/2 cup <b>cacao nibs </b><span style="font-size: x-small;"><i>("raw cocoa is full of antioxidants that rival super foods like blueberries, and many antioxidant rich teas the cacao nib is also rich in good fat and minerals such as calcium, zinc, iron and potassium.")</i></span><br />
<b>Marshmallows</b> - this was a bit of a blur.. it may have been 500g packet per batch... so just chuck a load in and see what you think..<br />
<br />
I simply melted the chocolate in the microwave for a min. combined all other ingredients in well and then plopped it into a lamington tray (40x30cm -ish) that was lined with baking paper and buttered.<br />
<br />
Cover with plastic wrap ( I have to use foil so the kids don't see it) and hey presto! Cut into half then in strips. <br />
<br />
<b><span style="font-size: large;">Honeycomb</span></b><br />
Now you know when something turns out so well it's braggable!?! Well my first batch was.. then we had a couple of really humid days and it went chewy on the outside.. but still Yummo!<br />

Here's my secret - GELATINE and the microwave:<br />
<br />
1 cup <b>white sugar</b> <br />
1 cup syrup (I used <b>golden syrup</b> but can be corn syrup, maple etc)<br />
1 tablespoon <b>white vinegar</b>.<br />
<br />
Stick those three in a pyrex dish and stick in the microwave for 6 1/2 mins on high, then wait until it's slowed down bubbling a bit before you take it out.<br />
<br />
Then add a 1/4 tsp of <b>gelatine</b> that was "blooming" in a <b>tsp of water</b> - stir stir stir!!! (will start doing the bubble up thing here.)<br />
<br />
Then quickly add <b>1 pre-sifted Tablespoon of baking soda </b>- madly stir! stir! stir! (volcanic action here)<br />
Then when it looks all mixed and is huge and foaming, tip it into a lined and super buttered baking tin (butter all the way to the top of the paper). NOT a tray but a cake tin. I used the smallest one I have about 20cms across. This way it's a high chunk and the gelatine makes better air holes throughout.<br />
<br />
It'll take an hour or two to dry out, then cut/smash/splinter up, pack and store in air tight container. If you leave it to the air it will go sticky and chewy then eventually dissolve.</span><br />

</div><span style="color: blue;">UPDATE: the Sauerkraut is great! I'm really surprised I managed to pull it off. It has a few more days to go but we've had really warm weather so I'm tempted to jar it up now and refrigerate... we'll see.</span><br />

Plus chocs, from my very soft hearted friend <b>Kay</b> (she made them for all the oldies she looks after, and seriously doesn't have the time!).<br />
* A dwarf Meyer lemon tree from my <b>husband</b> (and tea pot with mesh strainer inside for my new herbal tea fetish - rooibos chai is my fav at the moment)<br />

DS2 enjoyed the art exhibition and I'm sure would have learned alot if it wasn't for DS1 saying "come oooon!" the whole time. We gave the missionaries there a bag of 'white Christmas' we'd made (the white chocolate version not that skanky copha and milk powder blerugh!) and off to see the lights again.<br />

Here's a quick rundown of what I did. There's so many ways, so this is Suzi style.<br />

1. I got 1.5 ORGANIC cabbages, 3 organic carrots and a red onion (any pesticide/fungicide will prevent fermentation) <br />
<br />
2. Chopped it up finely, salted it (use Maldon, Himalaya or any salt that hasn't been processed or iodised) and then I left it covered overnight to wilt.<br />
<br />
3. Then I stuck it in my food grade plastic tub and smooshed and bashed the heck out of it with my masher and rolling pin end until the natural water content was released. <br />

I placed a plate over the top to keep the cabbage from rising. I used zip lock bags filled with water to weigh it down. It's nice as you can see what it's doing through the bag.<br />

6. Cover with cling/plastic wrap, gently place lid ontop and leave in your kitchen for 3 days. Then move it to a cooler place (but not the garage, you don't want to the process to slow too much) for about 3 weeks checking daily.<br />

BUT Kefir is a bit high maintenance for me. A bit like sourdough. I love sourdough bread and I can FEEL that it's low GI. It's an alkaline food which helps prevent inflammatory conditions but you have to feed it all the time. Thank heaven for freezers! There's a huge amount of them out there, naturally fermented<b> soy sauce </b>for one, homemade <b>kimchi </b>(at any good Korean eatery, <b>sauerkraut </b>(NOT the one in the jar with vinegar), <b><a href="http://www.amphore.com.au/Items_-_Shop.html">Kombucha</a></b>, <b>Sourdough bread </b>(stone ground please)... and the list goes on...EDITED TO ADD: Chocolate!! Hello!! Cacao pods are opened, fermented and then the cocoa butter (cream colour and a good fat) is separated from the brown solids that we use as powder.<br />

<span style="font-size: small;">I read back on the tasks today and I'm happy to say I've done alot of them already! Well, the silly things like "put up the decorations".. no brainer. I'm always pretty organised for Christmas. I'm a forward planner so start my ideas off in June! </span><span style="font-size: small;">We moved house this year though, so it's slowed me down a little.</span><br />

A couple of years ago I made <span style="color: #cc0000; font-size: large;"><a href="https://www.facebook.com/householdmanagement101">Mamma Karries</a></span> which were an absolute HIT! Flip, they take an age to make though. Lots of fun if I have a whole day to myself.<br />

I'll still do the spiced honey almonds... mmm.. maybe some home made herbal tea? We'll see.. Maybe our new honey man will deliver the honey comb in time! ... Probably because I don't have the time or inclination to stand there for an age doing individual decoration, piping and cutesie-fying just to impress. That's fine and wonderful if you want to and yes I do think they're nice to look at but think it's a little pointless all the same.<br />

DH chased a beautiful young goanna that was half way up the private road we live on. He's always been very careful with them and only ever gotten a scratch. This time he got bitten, hard. Actually it was more like a chew! We made Halloween lanterns ( a week early). The bright orange imported pumpkins were $4 a kilo!! So we got a rock melon and later a watermelon. DS1 had a great time and I sat on the floor with the melon heads each night with the candle on in their room as they dropped to sleep.<br />

Another first was home made foccacia pizza.. I really should have halved the dough, it was ALOT of dough. But super fluffy (even for my stone ground, light sift, whole grain flour) and really yummy! A definite hit. <br />

Here's DS2 with his and my first try at making pasta through my (flippin' fantastic) juicer. Again, it was that stoneground flour.. so it wasn't great in this recipe but just for play was great. DS2 loved it and I wished that I'd started the kids on wholegrain pasta from birth (they love quinoa/barley flake/seedy bread and raw veggies.. forgot about brown pasta!)<br />

FOR THE FINALE:<br />
The other firsts this month were... DS2 falling off the retaining wall in our new place. Fell onto concrete and miraculously was fine within 20mins! Dad has had more blood transfusions (which unfortunately isn't a first) and is on his second course of chemo.. worrying so I can't even write about it. I'm a Daddy's girl. x<br />

Our unparked car rolled down the drive (took an hour then we heard it!) and crashed into the bush taking out boulders and trees in it's path. We had four paramedics on scene (my husband and his co-worker to come and check it out plus his boss and station manager to open the bush trail gate for us with their special rescue key).<br />
